Hi, my name is Eileen O Donnell, in my Free From cookery classes in Cashel and Cahir. 

I teach adults and kids how to cook using the following ingredient types:

  • Allergy Free
  • Gluten Free
  • Grain Free
  • Dairy Free
  • Egg Free
  • Yeast Free
  • Refined sugar free

I teach how to cook with a focus on healthy eating, but most importantly on cooking interesting food without using ingredients that are generally harmful or may be causing allergic reactions or unease.

My Story

Most of my life I have suffered with allergies, resulting in my body reacting to wheat, sugar, and dairy.  It was not until I started eliminating these foods from my diet that I started getting relief from bloating sinus problems and sugar blues.

I also found I was having more energy and started to loose weight without counting calories

Despite known I was allergic to these foods it took me years to completely eliminate them from my diet and replace them with alternative ingredients to make the food I love taste delicious.

I now can enjoy my chocolate cake, yogurt, scones and even brown bread.  

During my search for optimal health I took several cookery classes at the Natural Gourmet Institute in New York as well as my own research for alternative recipes and ingredients.

Our bodies have profound healing energies and given the right food the body can correct any imbalance and restore us back to good health.

The Secret Sugar in your Food

Processed foods including juice and other  healthy foods, release more sugar than the average person’s metabolism can cope with

The recommended amount is just 5 to six teaspoons for an average woman of normal weight and nine teaspoons for an average man of normal weight

Cooking for Allergies

Ireland has the highest incident in the world of celiacs - a celiac requires a gluten free diet. Other common allergies triggers are eggs, milk, grains, sugar and yeast. In many cases the allergies have not been diagnosed.

Here at Free From my approach to cooking teaches people how to cook food that tastes delicious without using many of the allergy triggers as ingredients.

Healthy Cooking for Kids

I will run Healthy Cooking Camps during the summer months. These camps will teach kids the fun of cooling and will have a focus on how to use less sugar, include more fruit and use gluten and dairy free ingredients. The typical student will be aged from 8 to 16

In addition to cooking skills, the students will learn safety in the kitchen  (oven, stove, guards on oven ring etc) and they will also be helped to identify what food agrees with them and what to avoid.

For safety and efficiency, classes will have a max of 6 students. I have a philosophy that goes far beyond teaching standard cooking skills - obesity in both children and adults has become a real problem in Ireland and I truly believe that education at this level is the most important starting point to address the problem.

Healthy Eating on a Budget

Another market that Eileen will target is university students. A typical university student will be living away from home for the first time, will not have an income and as a result often eat poorly at a time when their memory and concentration should be at its peak. 

An example of the change in behaviour the course targets would be to make full use of a thermos for transporting food that is far more substantial than a sandwich, this could be a bowl of soup for lunch or even a stew.
